If you love a pasta dish this is the recipe for you, Taste Club’s Chilli Prawn & Tomato Spaghetti will not disappoint.
2 tbsp olive oil
2 cloves garlic
600g peeled cooked prawns
6 tomatoes, deseeded and finely chopped
2 heaped tbsp chopped parsley
Juice of ½ large lemon
Cook spaghetti in a large pan of salted water until tender. Drain and reserve a ½ cup of cooking liquor.
Heat a deep frying pan to medium heat. Add 1 tbsp of oil, add garlic and chilli and fry lightly.
Then add the prawns and saute lightly for 1 minute, adding the lemon juice. Stir in the spaghetti, cooking liquor and chopped tomatoes and parsley.
Season with salt and pepper and add the rest of the olive oil.
Serve in a warm bowl and sprinkle with the rest of the fresh parsley.
